Where to find your numbers
Revenue & guests
From your POS system (Square, Toast, Lightspeed) or cash register daily reports.
Food & bev costs
From your supplier invoices for the period. Add up all ingredient and beverage purchases.
Labour cost
Total wages paid including part-time, casual, and owner salary. From your payroll or accounting system.
Operating expenses
Rent, utilities, insurance, marketing, software. Everything except food, beverages, and labour.
Not sure about a number? Use your best estimate for now — even rough numbers reveal useful patterns. You can refine the data as you go. The benchmarks are industry averages, so small errors will not change the big picture.
